Simple Great Italian Cake Recipe "One of favorite my cakes"



Cake
1 (18 1/2 oz) box of white cake mix
1 stick of margarine
1/2 tap. Baking Soda dissolved in milk
2 cups of Angle Flake Coconut
3 eggs separated
1 cup of buttermilk
1 tap Vanilla
1 cup of finely chopped pecans

Preheat Oven 350 degrees. Combine cake mix, egg yolks, margarine, buttermilk, baking soda, vanilla, and mix with electric mixer. Fold coconut and nuts, add stiffly beaten egg whites. Bake in 9 inch layer pans that have been greased and floured for 25 to 30 minutes. Cool and Frost


Cream Cheese Frosting
8 oz package of cream cheese
1-lb box of powdered sugar
1 stick of margarine
1 tap of vanilla

Cream the cheese and the margarine, add vanilla and sugar and beat until smooth. Spread on cake. Sprinkle top with chopped pecans, if desired.
